Starward Distillery was created by David Vitale who was looking to create a distillery inspired by Melbourne’s famous temperature swings or ‘four seasons in one day’. The distillery was once situated at Essendon Airport in the old Ansett Hanger but after popularity of the whisky grew the space they had was too small. The distillery was moved to a larger space in Melbourne’s Port Melbourne district in 1996 and production was significantly increased. The distillery makes use of local wine barrels to mature its whisky. Winning international awards and local awards to strengthen its claim as a distillery on the rise to fame.
The Starward Fortis was released for the first time in 2020. Using 100% American Oak ex wine barrels mostly sourced from Barossa Valley wineries. These barrels were used to mature powerful shiraz and cabernets. Some of the barrels were charred to add complexity, some are fresh which adds an intense red wine flavour to this whisky. The one difference from most other releases from Starward is they do not chill filter this whisky which means you are enjoying all the goodness straight from the barrel. Bottled at 50% abv you are purchasing batch #1.
Our Tasting Notes
Nose: Vanilla slice, summer pudding, almond meal, toasted oak, apple and pears and banana fritters.
Palate: Blackcurrants and blueberries, red berries and dark caramel. White grapes, sweet oak with cinnamon spice and old oak.
Finish: Some toffee sweetness and tannins of shiraz wine.
