Established in 2015 by owners Cam and Suzy Brett this distillery is a realisation of a dream. The owners shared their love for whisky for over 20 years and now the planning, hard work and dreaming has all come together. This distillery ensures that every part of the whisky making process is completed to the highest standard. They use Tasmanian barley, they carefully designed and created the stills, they use some of the purest water in Tasmania (if not the world) and they finish it all with passion. Using quality stocks of ex-Bourbon (Amnerican oak) and ex-Sherry as well as ex-Port barrels (both French oak) to mature this wonderful spirit.
Taking local rain water and local barley then turning it into whisky is not an easy job. This whisky is all that is Tasmania, fresh, sweet and luscious. Matured in ex-Sherry French oak barrels.
Bottled by hand at 46% abv, unchill-filtered and natural colour.
Official Tasting Notes
Nose: Caramel & raisins
Palate: Lifted floral notes, caramel and dried fruit sweetness with some white
pepper savory hints
Finish: Delicious long and slightly dry finish which is indicative of some very
fine old wood. A slightly smokey note that suggests peat but comes
from the heavy cask charring.
