The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks. The Port Dundas Distillery was a landmark in Glasgow. Built in 1811 at the highest point in the city next to the banks of the Forth & Clyde Canal where it grew in size to become the largest distillery in Scotland. Its three Coffey stills and five pot stills produced over two million gallons of spirit a year. They used ‘American Corn’, barley and rye to produce their spirit. In 2010 its owner Diageo decided to concentrate its grain production at the Cameronbridge distillery. Although there were offers from rival distillers to buy Port Dundas they foundered – possibly because of the potential cost of another upgrade. In 2011, production ceased and the site was demolished. The landmark was gone forever but t some of the whisky lives on. A now closed distillery. This single grain whisky was distilled in 2006 at the Port Dundas distillery before being placed in bourbon barrels and left to mature for 12 years. In 2019 it was bottled at 43% abv as part of the Signatory Vintage Single Grain Collection.

Our Tasting Notes

Nose: Malted barley and dry grassy notes, tropical fruits and sweet pastry. Palate: Orange jam, tropical fruits, caramel and vanilla. Finish: Banana fritters, vanilla anglaise and toffee.
