With Irish whiskey these days the choice seems to be limited and there are very few chances to enjoy a whiskey that has been maturing in a sherry barrel. Well the Hibernia Distillers in Ireland have create just that. This limited edition release is named after Douglas Hyde, he was the first President of Ireland. The Hibernia Distillers have managed to source some excellent barrels from another distillery in Ireland, possible Cooley distillery. After maturation in ex-bourbon barrels they have transferred the single malt into first fill Oloroso Sherry casks to mature for a total of 6 months. Bottled at 46% ABV and no contact to chill filtration this whiskey is an experience not to be missed. It’s also history in the making with the Hibernia Distillers team distilling there own whiskey recently which will be released in 5 years. More Irish whiskey for us to choose from, that’s never a bad thing.

Official Tasting Notes
Nose: Delightful notes of peaches & cream, vanilla, barley malt softness, with citrus, sweet, honey, caramel, chocolate, orange, lemon, banana, & infused with spices.
Taste: Wonderfully smooth yet complex, creamy yet fruity with notes of caramel and Manuka honey, apricot, plum, and a silky malt texture.
Finish: Rich, Spicy, & Oaky. It lingers in the mouth with a long rich finish.
