A great red wine from the legendary Aÿ plot: a pure Pinot Noir, the combination of an exceptional plot and a typical Burgundy highly skilled winemaking method. Very rare in Champagne country.   The Champagne vineyards were originally renowned for their red wines. Those made exclusively with Pinot Noir from the village of Aÿ were a great favourite at the French Court, especially under King Henri IV.   Tasting Notes: A beautiful garnet colour. Aromas of elderberry, liquorice, redcurrant and cherry; peppery notes. On the palate, a good tannic structure and an aromatic balance oriented toward red berries; aromas of blackberries, morello cherries and redcurrants. Food Pairing: Veal in red wine sauce,Beef filet with shallots and red wine sauce,Poultry and duck. Tomme from Savoie, Brie from Meaux.   Serving: La Côte aux Enfants is a wine destined to connoisseurs looking for Champagne appellation specialities. This wine is surprisingly concentrated and powerful. To fully appreciate its unique style, bouquet and aromas, we recommend decanting La Côte aux Enfants a few hours before serving at 16°C. You can enjoy La Côte aux Enfants  within the next five years in order to fully appreciate the expression of its fruit, or choose to age it in your cellar and enjoy different tasting sensations. Grape Variety: 100% Pinot Noir Grand cru of Aÿ Wine from one single free run. Burgundy-style cultivation and production methods (green harvesting, hand sorting on the vine then on tables, de-stemming, pre-fermentation maceration at low temperature for 8 days followed by a gradual rise in temperature). Production: Ageing for 8 months in small, recent oak barrels. Limited yields, between 6,000 and 8,000kg per hectare. Limited production, reserved for the finest vintages. Enhances the blend of La Grande Année, added in very small proportions (5-7%) to produce La Grande Année Rosé. Background Information: Champagne country originally owed its fame to its red wines. Favourites of King Henri IV, the Pinot Noirs from the town of Aÿ were the most popular wines of the French court. La Côte aux Enfants comes from a steep plot just outside Aÿ. Jacques Bollinger himself reconstituted it patiently, at the beginning of the 20th century, from over 50 differently owned plots! Today, Bollinger owns four adjacent hectares of the legendary plot. Since 2009, all vines grown there are organically farmed. Produced from a single plot of 4 hectares. La Côte aux Enfants is produced under the Coteaux Champenois Appellation and is only made in exceptional years. The harvest date is decided carefully at the moment when the grapes reach their optimum maturity.
