Established in 2008 Balcones Distillery was created to deliver a product that is original and and authentic. More importantly it was to deliver this right in the heart of Texas. Taking an old welding shop under a bridge in Waco it was slowly transformed into a whisky distillery and in 2009 the first spirit ran through the stills.
The producers here source local grain, blue corn from New Mexico, Texas grown malted barley, local re-coopered barrels and rain water. The idea is to create whisky that is recognizable and delectable. Ageing here is performed in a unique climate, barrels ‘breathe’ much faster than in Scotland which causes the oak flavours to mingle quicker and accelerates the ageing process. This is whisky that is full of rich flavours and bursting with character.
Balcones Baby Blue celebrates the first Texas whisky on the market since prohibition. Using roasted heirloom blue corn from New Mexico. This rich and oily maize adds new sophistication to the corn whisky tradition while keeping the freshness and verve of classic American distilling. Intentionally youthful this whiskey captures wonderful nutty characteristics with roasted oak overtones and a viscous mouthfeel.
Our Tasting Notes
Nose: Caramelised bananas, freshly made butter popcorn, vanilla and toasted bread with honey sweetness.
Palate: Orchard fruits of apple and apricots, rich and thick with dark chocolate caramel, Lemon zest and salted butter.
Finish: Long and delicious, cinnamon and nutmeg, spearmint and caramel sweetness.
