In 2016 Iain Croucher began North Star Spirits in Glasgow after working for the independent bottler AD Rattray. North Start has since bottled a wide variety of both Single Malt and Blended Scotch Whisky including some American whiskies too. The brand is named after the star ‘Polaris’ – the current Northern pole star. The theme of astronomy continues with various releases being named after other stars in the universe including ‘Vega’ and ‘Sirius’. The bottler was awarded ‘Independent Bottler of the Year’ at the Scottish Whisky Awards in 2020.
The Auchroisk Distillery is situated in Banffshire, Speyside Scotland. The Distillery produces a heavy malt whisky made by rapid mashing, quick fermentation and rapid boiling distillation. Founded in 1974, Auchroisk is one of Diageo’s workhorse distilleries with the majority of the 3,100,000 litres produced annually destined for the J&B brand Blended Scotch Whisky.
This single cask single malt whisky was distilled at the Auchroisk distillery before being placed in a single Oloroso Sherry Hogshead and left to mature for 13 years. In June 2019 it was bottled at 51.2% abv as part of the North Start Cask Series Number 9. Only 280 bottles were produced for worldwide distribution.
Our Tasting Notes
Nose: Christmas cake meets chocolate ganache.
Palate: Raw Christmas cake dough, vanilla essence and flaked nuts.
Finish: Vanilla sponge cake, apricot and berry danish.
