New Norfolk Distillery is anchored in the Derwent Valley at the southern edge of Australia. As the wilderness roars around them, they nurture rebellious spirits including rum, gin and liqueurs.

Their rum is made using traditional techniques, including the use of copper pot stills and oak barrels for aging. The rum is made from a blend of molasses and sugar, which is fermented using a specially selected strain of yeast. The fermented wash is then double-distilled in copper pot stills to produce a clean, smooth spirit.

After distillation, the rum is aged in oak barrels for a minimum of two years, which gives it a rich, complex flavor. The barrels used for aging are carefully selected to impart a unique flavor profile to the rum.
