In 2016 Iain Croucher began North Star Spirits in Glasgow after working for the independent bottler AD Rattray. North Start has since bottled a wide variety of both Single Malt and Blended Scotch Whisky including some American whiskies too. The brand is named after the star ‘Polaris’ – the current Northern pole star. The theme of astronomy continues with various releases being named after other stars in the universe including ‘Vega’ and ‘Sirius’. The bottler was awarded ‘Independent Bottler of the Year’ at the Scottish Whisky Awards in 2020.
The Fettercairn Distillery is situated in the small Scottish town of Fettercairn, very close to the Cairngorm Mountain range in Scotland’s Eastern Highland district. The distillery has an open topped mash tun, wooden washbacks and small stills. The spirit produced between 1995 and 2009 had a rather heavy and nutty style that was until a cooling ring was attached to the top of the swan neck. This cooling ring sprays cold water down the sides of the still which aids reflux and helps produce a lighter style spirit.
This single cask single malt whisky was distilled at the Fettercairn distillery before being placed in a single Refill Hogshead and left to mature for 12 years. In February 2019 it was bottled at 57.4% abv as part of the North Start Cask Series Number 7. Only 180 bottles were produced for worldwide distribution.

Nose: Black tea & gooseberries.
Palate: Crushed bobal grapes & barley sugars.
Finish: Hints of disco & funk.
