Using their own Single Farm barley crop to pursue the individualism of terroir-derived flavour. The Waterford Distillery is simply a unique Irish whiskey experience which is rightfully claiming to be the world’s largest producer of organic and biodynamic whiskies. In Ireland’s Sunny South East, warmed by the Gulf Stream, temperate, moist air crosses fertile soils to produce a verdant landscape – & the world’s finest barley. Since barley is the source of malt whisky’s complex flavours, it makes abundant sense to focus on where and how the barley is cultivated. Those flavours are shaped by place, by the soils that nourish its roots, by the microclimate in which it ripens. By terroir.

Waterford boast using the most state of the art equipment to enable them to ferment their whisky for over 120 hours. To keep the different types of barley seperate, to make whisky unhurried.

The Arcadian Series of alt-barley is where the distillery champion those maverick growers whose inspirational ethos & way of life respects the land and the old ways in the pursuit of flavour over yield imperative. For the first time they dip into a new vintage: the 2016 organic harvest. Once again Gaia, neopagan goddess & a personification of Mother Earth herself, is their standard bearer for the celebration of this vibrant new edition of Ireland’s only whisky to be distilled from organic Irish barley.

This is the second release of the Gaia single malt from Waterford Distillery. Using local organic barley and putting in a whole load of extra effort to bring the whisky drinker something extra special.

Tasting Notes

Nose: Orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fresh fruit salad, fig roll biscuits, lavender, sweet marshmallows, butter milk.

Taste: Spicy, white pepper, grapefruit, dry heat, liquorice, cherries, coco powder, wine gums, dry toast, salted peanuts, lemon zest.

Finish: A dry spice dance that tangos and waltz’s like a happy couple into the golden peach sunset.
