Spirit Thief Distilling Co. were originally started as a small scale whisky club with friends who were interested in sampling and exploring whisky mainly matured in Australian red wine casks. These friends were very keen on starting to make an impression in the industry and so developed an independent bottling label. Their successful independent bottling business soon extended into a gypsy distilling company. What’s gypsy distilling you may ask! We Spirit Thief do not have a specific distillery location but instead use other distilleries to produce their spirit. Almost like steeling the excess spirit from a distillery that is overproducing. They then choose their own high quality ex wine casks and mature the whisky. When ready they bottle this at it’s perfect alcohol strength giving you the satisfaction of whisky that was loved and cared for throughout its full maturation period.

This whisky was matured in seasoned American oak casks which had previously held Tempranillo wine sourced from South Australia’s award-winning Main & Cherry wines in the Adelaide Hills. The barrels had been re-coopered (redesigned, freshened up) and given a medium toast and char to integrate the spirit into the wine and the wood. Bottled at 52.3% ABV and released as part of the Cellar Reserve Series with limited production of only 750 bottles.

Producers Tasting Notes

Nose: The aroma transports you to an underground speakeasy where jazz fusion harmonises with muffled conversation.

Palate: Swathes of Turkish delight, berry compote, rich brown sugar, praline and madeira cake.

Finish: Long-lingering, dark and enduring like the last notes in the Club in the early hours of the morning dawn.
