The Caol Ila Distillery, The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.Fable whisky is an independent bottler founded on the art of storytelling, animation and illustration.

This is one of five single cask whiskies in Fable’s first outturn, this Caol Ila represents the Clanyard chapter in the tale of The Ghost Piper of Clanyard Bay. It has been matured for 10 years in a single ex-Bourbon hogshead and selected to be bottled at cask strength. Only 311 bottles wre made available for worldwide distribution. Our Tasting Notes

Nose: Slow cooked bacon on a BBQ smoker, bonfire ash, salty sea air, toasted grainy bread, seaweed and lemon citrus. 

Taste: Freshly baked wholemeal loaf with honey and salted butter, earthy ashy notes, fresh lemon citrus, new leather and fennel seed with peppery spice.

Finish: Medium to long addin smoked meats, charred lemon cheeks, oatcakes and white pepper.
