Tasmanian Heartwood Malt Whisky Pty Ltd currently has 7,000+ litres of whisky stored in 200 litre and 300 litre barrels. Some of these whiskies are the oldest single malt whiskies produced in Australia. The whiskies are maturing in a variety of barrel types that include bourbon and Australian muscat, port and sherry – with maturation ages ranging from just a few months to 14 years of age. The collection commenced in 1999 and continues today where they have control and input into every stage of the whisky’s development. They are there to determine the amount of peat used for production. They are there when the spirit is produced. They are there to select the barrel. They are definitely there to sample the whisky as it matures. They do not have commercial drivers. The quality of the whisky produced is the most important aspect of their endeavours. The whisky will be bottled when it is ready. If it is really, really, good, they might just keep it for themselves (to be shared with family and friends).
