The Lark story is not so much about the distillery but the man behind he distillery and for that matter behind the seed of Australian Whisky distilling as we know it today.
Bill Lark realised that that everything you need for a world-class whisky was in Tasmania – rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs, and the perfect climate to bring all the ingredients together in a marriage of science, art and passion. The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania. Bill’s father in-law Max produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell, surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, “I wonder why there isn’t anyone making malt whisky in Tasmania”.
It was over a dram of Glenfarclas 15, many years ago, that Bill and Lyn Lark remarked that if they were ever to make a single malt, they would hope to have it resemble what they were enjoying at that moment. Rather fortuitously, and only a short time before the opening of their now legendary distillery, Bill received a phone call from Scotland. It was John Grant from Glenfarclas. The two talked whisky for many hours, and a lifelong friendship was formed. One that would transcend oceans, decades and establish an unbreakable bond between the Glenfarclas and The House of LARK names. A long, luscious single malt matured in traditional port casks, with a touch of sherry and bourbon. Finished in Glenfarclas casks from the Scottish Highlands.

Your 700mL bottle is accompanied by a copper medallion meticulously handcrafted from a decommissioned LARK copper pot still, and a complimentary 100mL bottle enabling the collector to enjoy and savour now.
Our Tasting Notes
Nose: Stewed currants, raisins and sultanas combined with subtle Lark Highland peat smoke balanced with crushed nuts, nutmeg and creamy toffee.
Palate: Stewed dark fruits combine with creamy vanilla, milk chocolate and nutmeg with toasted pecan and dark toffee.
Finish: Long and luscious showing more sultanas, earthy honey, fruit tea and fresh creamy notes of malted barley and sweet sherry.
