Apothecary Gin is distilled at Killara Distillery in Goodwood by second generation Australian Distiller Kristy Booth-Lark (daughter of Bill Lark). The distillery is the first one in Australia to be owned and operated by a second generation distiller (and a female!). Kristy has over 18 years experience in the industry.
Apothecary Gin is produced using 10 different botanicals (including juniper, coriander, lemon, orange, olive leaf, camomile, lemongrass, pepper-berry) that are each individually distilled in a small copper pot still then married together to create the perfectly balanced gin. However this gin has triple the juniper.
The main botanicals are juniper, coriander, several different types of citrus and some native Australian botanicals. This gives the gin a big juniper hit upfront and is the main flavour coming through to the palate though it is still well balanced with the other botanicals. The juniper is still prominent when mixed with tonic or other mixers. It is 40%abv but the extra kick of juniper makes it seem higher in alcohol. It’s really great to sip on it’s own if you like a big juniper taste or add a splash of your favourite mixer or into a cocktail.
Official Tasting Notes
The Apothecary Gin itself is very juniper driven with hints of citrus, full mouth coverage and crisp clean finish. This gin though takes these characteristics to another level. The effect of the triple juniper gives more of a punchy feel in the mouth developing more flavour and enhancing the botanical already present. It is fantastic on its own and also goes well in a classic G’n’T, negroni, martini etc. I love it with a dash of ruby grapefruit juice over ice.
