The distillery itself is new built with shiny new stills and aromatic new oak. It boasts a terrific visitors centre and also some very spectacular scenes for the whisky connoisseur. The area is also famous for a mill that is the only operating mill of its type in the Southern Hemisphere. It is also the third oldest windmill in Australia, Built in 1837 by Tasmanian John Vincent. The distillery is now in the goods hands of three experienced distillers, Benny Ellery, Blair Whitehead and Jack Sellers who can use the latest in whisky making technology to bring you some of the best whiskies Tasmania has to offer. We introduce you to the Callington Mill Distilleries Leap Of Faith Series, a selection of eight new releases showcasing the distillation and maturation processes of the team at this new distillery. Using a mixture of double and triple distilled single malt whiskies to introduce the face of Callington Mill. A triple distilled single malt whisky from Callington Mill which has been created by Damian MacKey. Initially matured in 100 litre Apera (sherry) casks then matured in an exclusive 700 litre ex-Tawny cask sourced from the Douro Valley in Portugal and premium 300 litre French oak ex Cognac Casks. Bottled at 46% ABV and awarded a silver medal at the International Wine & Spirit Competition 2022 with a score of 90.

Nose: Rose water, Turkish delight, toasted pineapple, lemon sherbet. Palate: Strawberries and cream meats Peach Melba. Finish: Medium length with Banana cake and icing sugar.
