“It’s no different than what we do in the kitchen which is probably why we enjoyed it so much. You know it’s all about balance, measurement, precision and taste” – Ashley Palmer-Watts, Chef Dinner By Heston Blumenthal ABC Radio Interview Nov ‘2016

Handcrafted in a single small batch and aged in a French Oak Pinot Cask. This complex gin spouts a striking pink glow, a sweet & earthy palate with an incredibly smooth and delicate finish, fantastic neat, on ice or ideal for any gin based cocktail.

Giniversity releases its inaugural Christmas Gin 2017.

Blended over several sessions by their Distilling team of Cameron, Bec and Ben, with the objective being to capture in a gin the Summer feeling that is an Australian Christmas. With more than 18 iterations to the final Giniversity Christmas Gin, they’ve taken key elements of a traditional London Dry recipe, and then pushed the boundaries by bolstering the Juniper and adding subtle summer fruits, including essential oils of Fig, Apple and Berries. Their Distillers then gave this a final smoothing of the palate and addition of background naturally bitter-sweet ginger elements which they extracted from the maceration of the fruit of the Australian Native Quandong Tree. The Quandong fruit in this gin is sustainably hand foraged from wild grown Quangdong trees on a South West farm of a Friend of the Distillery.

This first Giniversity Christmas Gin has been produced in a strictly limited small batch of 380 bottles and presents as a wonderful example of the seasonal beauty of a West Australian Christmas.

Best served neat chilled, or mixed with Fever Tree Mediterranean Tonic Water and ice, with an in glass garnish of sliced strawberry or kiwi fruit.
